Basil Lemon Salad Dressing and Marinade
Roz from Roz's Scrumptious Recipes shared with us her Basil Lemon Salad Dressing and Marinade. Taste great on chicken and a real food enhancer. Try it at one of your summer grilling parties! Roz used the flowering parts of her basil plant. They added a floral quality. You can also make this just with leaves if your plant is not flowering.
The nice thing about this recipe is its versatility as either a salad dressing or as a marinade. That means it is light and subtle enough to enhance your salad but bold enough to be used on your grilled food. That is what caught our eye ... and taste buds.

Ingredients
Serves: three
- 2 Tb basil flowers and/or leaves
- juice of one large lemon: 2 Tb
- 1 Tb water
- 3 Tb garlic-infused olive oil
- sprinkle of salt to taste- about 1/8 tsp.
Directions
- Blend together and pour over green garden salad. I made my salad with lettuce, tomato, cucumber, avocado, artichoke hearts canned in water, and carrots. I added sliced baked chicken breast, and the basil dressing worked well on that too.
- Use as a chicken marinade as well. Double the basil, lemon juice and oil to 1/4 cup each. Increase the salt to 1 tsp. I added a ripe tomato to the blender and it made the chicken breast juicy and tender after a couple of hours marinade time. Remember to make several cuts on each side of the breast to allow the marinade to penetrate. Great on the grill!
