Basil Cream Sauce
This basil cream sauce is fresh, delicious and versatile. Use it to top your favorite pasta, poultry or fish. Try it with Pesto Chicken with Basil Cream.
We recently tried this with salmon. I am not a big salmon fan ... as a matter of fact, I would never eat it. However, this sauce seemed to blend in very nicely with the salmon and now it is the only way I will eat salmon. It is amazing how a sauce can change something you avoided in the past and suddenly made it quite a bit more than tolerable ... in fact, it made it good.
Ingredients:
- 1/4 cup shallots, chopped
- 2 Tablespoons butter
- 1/3 cup dry white wine
- 1 1/2 cups heavy cream
- 1 cup fresh basil leaves, shredded
- 2 Tablespoons lemon juice
- 1 Tablespoon corn starch
- 1 Tablespoon water
Preparation:
Heat the butter in a deep skillet over medium heat. Add the shallots and sautee until translucent. Add the wine and bring to a boil. Continue boiling for 2 minutes or until the wine is reduced by half. Add the cream and return to a boil. Continue boiling, watching carefully that it does not boil over, for 8 to 10 minutes or until the sauce is reduced to approximately 1 cup. Whisk in the basil and lemon juice.
In a separate bowl, whisk together the corn starch and water. Add to the sauce and whisk until the sauce thickens slightly and is heated through.
