Pesto Chicken with Basil Cream
Pesto chicken with basil cream is a divinely delicious meal that is impressive but easy to prepare. It is perfect for entertaining.
The nice thing about this recipe is that it shows the versatility of several other recipes found on BasilBasics. We did use this collection of recipes in a recent get-together and it was a big hit. Give it a try at your next event.
Ingredients:
- 8 boneless, skinless chicken breasts, pounded to 1/4 inch thick
- 8 prosciutto slices
- 1/2 cup basil pesto
- 4 Tablespoons lemon juice
- 1/4 cup extra virgin olive oil
- 3 garlic cloves, minced
- Freshly ground pepper, to taste
- Basil cream sauce
Preparation:
Place 1 slice of prosciutto on top of 1 chicken breast. Spread 1 Tablespoon of pesto over the top. Roll the breast, beginning with one small side. Secure with a toothpick that has been soaked in water to prevent burning. Continue until all of the chicken breasts have been prepared this way.
Place the chicken breasts in a casserole dish and drizzle them with 3 Tablespoons of the lemon juice. Cover and refrigerate overnight.
Preheat oven to 350 degrees.
Combine the olive oil, garlic, 1 Tablespoon lemon juice and pepper. Pour over the chicken. Cover with foil and bake for 20 to 30 minutes.
While the chicken is baking, prepare the
Basil Cream Sauce.
Remove chicken from oven and arrange onto a serving platter. Pour basil cream sauce over the top and serve.
