Torta Caprese

This torta caprese recipe takes the classic flavor combination of tomato, basil and mozzarella to a whole new level. This might also be called caprese pie.




You can enjoy it warm or make it in advance and enjoy it room temperature. Either way, you are sure to enjoy it!

Ingredients:

  • 1 10-inch tart crust, pre-baked
  • 3 large tomatoes, sliced 3/8 inch thick
  • salt, to taste
  • 1 cup packed fresh basil leaves
  • 1/2 cup small curd cottage cheese
  • 2 large eggs
  • 1/2 cup fresh mozzarella, finely chopped
  • 1/2 cup freshly grated Parmesan cheese
  • extra virgin olive oil

Preparation:

Pre-bake the tart crust and set aside.

Preheat the oven to 350 degrees.

Sprinkle the tomato slices on both sides with salt and set on paper towels to absorb excesss moisture.

Put basil, cottage cheese and eggs into a food processor or blender and combine. Add mozzarella, Parmesan and 1/2 teaspoon salt. Continue blending until well-mixed.

Line the bottom of the tart shell with tomato slices. Spread the cheese mixture over the tomatoes. Top with another layer of overlapped tomato slices. Brush the top with olive oil. Bake 50 to 60 minutes or until set. Let cool 15 minutes before slicing and serving.
