Mustard Basil Chicken Recipe
This basil chicken recipe uses basil infused olive oil to impart sweet basil flavor into grilled chicken breasts.
There are quite a few chicken recipes on Basil Basics, but this one is one of my favorites because it involves the grill. If you know anything about us, we love cooking on the grill anytime of year, but especially during the summer months with the pool a few steps away. Of course, at home, that means on a gas grill (laziness factor), but while at our vacation home, that means charcoal. This recipe is great on either method, so give it a try! Nothing like chicken on the grill ... and this will add a little extra just for something a little different.
Ingredients:
- 3 Tablespoons grainy mustard
- 4 Tablespoons basil infused olive oil
- 1 Tablespoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon freshly cracked black pepper
- 4 boneless, skinless chicken breasts
Preheat your grill to medium-high.
In a bowl, combine the mustard, oil, honey salt and pepper. Spray your grill rack with nonstick cooking spray.
Place the chicken on the grill and brush with the mustard and oil mixture. Let cook 5 minutes and then flip it over.
Brush the other side with the mustard and oil mixture and let cook 5 minutes.
Continue flipping and brushing for a total cooking time of 20 minutes, or until your chicken is cooked all the way through.
