Fresh Parsley Basil Salad Dressing

This parsley basil salad dressing is fresh, delicious and healthy. It's a perfect way to use homegrown garden fresh herbs.


In summer when you want to eat a little lighter, it's common to have a fresh salad for supper. Use the fresh parsley and basil you grow in your herb garden (or pick some up at your local farmers' market) and top that summer salad with this vibrant and flavorful basil dressing.

Ingredients:

  • 1 cup packed fresh basil leaves
  • 1 cup fresh parsley leaves
  • 2 garlic cloves
  • 3 teaspoons sugar
  • 1/4 cup red wine vinegar
  • 1/2 cup vegetable oil
  • 1/4 cup freshly grated Parmesan cheese

Preparation:

Place all ingredients in a food processor or blender and blend until smooth and creamy. Use right away or refrigerate for several hours only. Any longer and the dressing will begin to separate.
