Parsley Basil Salad Dressing

This parsley basil salad dressing is fresh, delicious and healthy. It's a perfect way to use homegrown garden fresh herbs to add that great summer time flavor to your meals.

In summer when you want to eat a little lighter, it's common to have a fresh salad for dinner. Use the fresh parsley and basil you grow in your herb garden (or pick some up at your local farmers' market) and top that summer salad with this vibrant and flavorful basil dressing.

Don't, however, save this only for summer dining. This is a great anytime salad dressing!

Please note that the recipe calls for being used the same day that it is created. If not, the ingredients will begin to separate. For best results, use the salad dressing soon after it is made.

  • 1 cup packed fresh basil leaves
  • 1 cup fresh parsley leaves
  • 2 garlic cloves
  • 3 teaspoons sugar
  • 1/4 cup red wine vinegar
  • 1/2 cup vegetable oil
  • 1/4 cup freshly grated Parmesan cheese

Place all ingredients in a food processor or blender and blend until smooth and creamy. Use right away or refrigerate for several hours only. Any longer and the dressing will begin to separate.
