Basil Dressing

This basil dressing recipe combines malt vinegar, mustard and basil to create the perfect sweet and delicious vinaigrette. This basil salad dressing can be used on virtually any salad, but is especially delicious when used instead of mayonnaise in chicken salad.

This recipe was created by the original owner of BasilBasics and has become one of our favorite on the site both for its simplicity but because of the great taste it adds to our salads and surprise chicken salad. Friends who joined us for lunch insisted on getting this recipe and I am sure your will too. The nice thing is, although short on calories, it is big on taste and unlike the store bought dressings, it is all natural and is fresh. So give it a try!

Ingredients:

  • 1/2 cup packed fresh basil leaves
  • 1 1/2 teaspoons dry mustard powder
  • 1/2 cup confectioners sugar
  • 1 teaspoon freshly cracked black pepper
  • 1/2 teaspoon salt
  • 1/2 cup malt vinegar
  • 1 cup extra virgin olive oil


Preparation:

Place all ingredients in a food processor or blender until well blended. Use immediately or refrigerate up to 5 days. Shake or whisk well before using.
