How this became a staple at our house is a bit of a story. So one night at dinner, we were having chicken and I asked for the butter for my bread. My wife passed me the butter that had this green stuff in it. I looked at her with the typical husband look ... but decided to try it anyway. Sometimes that is easier. Surprisingly ... it ... was ... GOOD. So now whenever she prepares something with basil butter, she knows to make a little extra for use in the bread. So two lessons here ... Green stuff in butter (especially if it is the basil butter recipe) is not necessarily bad and, well, your wife is right more often than not.
Place it on your table when you have guests for dinner. It is a wonderful way to create upscale bread and butter. Tuck pats of this butter under the skin of chicken or turkey before roasting. Serve a pat on top of steak. Use it anywhere you would normally use butter, but add lots of fresh herb flavor at the same time.
