This basil mayonnaise adds the sweetness of ripe mango. It is simple to make so it won't add much more time than it takes to open the mayonnaise jar, but it will add so much more flavor!
Ingredients:
2 ripe mangos, peeled and pulp removed
2 Tablespoons roasted garlic
1/2 cup mayonnaise
1/4 cup extra virgin olive oil
salt and pepper, to taste
1/2 cup fresh basil leaves, shredded
Preparation:
Blend the mango pulp, garlic and mayonnaise in a food processor or blender. With the blender running, stream in the olive oil until the mixture is smooth. Transfer to a bowl. Stir in the basil. Season with salt and pepper.
You can use this mayonnaise right away or refrigerate for up to 3 hours. Any longer and it will begin to separate.
