Caroline from The Olive Orchard shared some of her recipes using basil. But first, she shared her affection for basil.
I heartily enjoy using basil olive oil (created by pressing fresh basil along with the olives) on my pasta and on my green salads. With tomato season arriving, basil olive oil is also wonderful drizzled over sliced fresh tomatoes, sprinkled with sea salt and pepper.
Grilled Tomato-Basil Sandwich is a recipe favorite. Brush basil olive oil on two thick slices of artisan bread. Place sliced fresh tomatoes, mozzarella cheese and basil leaves between the bread. Sprinkle with balsamic vinegar, salt & pepper. Grill (covered) over medium heat until cheese is melted.
