Tomato Basil Recipe: Sweet and Sour Basil Tomatoes
If you are looking for a tomato basil recipe with a little something different, these sweet and sour basil tomatoes will knock your socks off.
We originally came up with this at summer's end when are garden was way over producing. We had used the tomatoes in all the usual ways: on our sandwiches, in my father's favorite salad (olive oil, water, tomato and basil), and in our sauces. But still, we could not keep up with the production from the garden. We were kind of tomato-ed out. My wife put this together, and it became one of the family's favorite. Give it a try!
Ingredients:
1 pound tomatoes
1 teaspoon brown sugar
3 teaspoons balsamic vinegar
2 Tablespoons extra virgin olive oil
3 Tablespoons fresh basil leaves, shredded
1 Tablespoons chopped fresh chives
Preparation:
Slice the tomatoes and arrange them on a serving platter. Sprinkle them with brown sugar and then drizzle with vinegar. Next, drizzle with olive oil. Sprinkle the basil and chives on top. Let marinate for 10 minutes before serving.
