Brushetta

Is there an Italian restaurant without brushetta on the menu? It is a staple as one of the favorite appetizers or finger foods served in most restaurants or great affairs. We have a friend who always orders it if it is on the menu. It seems she has her own competition going on to see which one is the best ... even rates them on a scale from 1 to 10.

Simple to make, but what a treat for the palate! Again, tomatoes, garlic and basil combine to create this wonderful treat. And what would it be without the great taste of basil?

Here is a simple recipe for creating this delicious appetizer for your private affairs and family get-togethers. No doubt, family and friends will enjoy this great appetizer. Don't forget to share the recipe!





Ingredients

  • Tomatoes cubed (about 6-8 Roma tomatoes work best)
  • 1-2 minced garlic cloves
  • 1/4 c. olive oil
  • 1 tbl. balsamic vinegar
  • salt and pepper to taste
  • 10-12 fresh basil leaves cut into small pieces
  • 1 baguette (French bread)


Directions

Toast baguette slices in a 350 degree oven for 10 min. Mix tomatoes, garlic, basil, salt and pepper - toss with olive oil and vinegar. Serve immediately on the toast.
