Tomato Basil Bisque

This tomato basil bisque is a heartwarming way to satisfy your need for a rich, creamy tomato basil soup. It is easy to make, thick and full of flavor. Serve it for lunch with a grilled cheese or for dinner with crusty bread. This is the perfect recipe for tomato basil soup.




Ingredients:

  • 3 Tablespoons butter
  • 1 large onion, coarsely chopped
  • 2 celery stalks, coarsely chopped
  • 3 garlic cloves, coarsely chopped
  • 3 (14.5 oz.) cans whole tomatoes
  • 4 cups chicken broth
  • 1 (3 oz.) can tomato paste
  • 3 Tablespoons fresh parsley, chopped
  • 1 cup fresh basil leaves
  • 1/2 cup heavy cream
  • Salt and pepper, to taste
  • Freshly grated Parmesan cheese
  • 5 fresh basil leaves for garnish

Preparation:

Melt the butter in a large soup pot over medium heat. Add the onion and celery and saute until tender, about 5 minutes. Add the garlic and cook for one more minute. Add tomatoes, broth, tomato paste, parsley and basil. Increase the heat to high and bring to a boil. Reduce heat. Cover and simmer 10 minutes. Uncover and simmer an additional 10 minutes.

Either with an immersion blender or in batches in blender or food processor, puree the mixture and return to the pot. Stir in cream. Season with salt and pepper. Top with Parmesan cheese and chiffonade of fresh basil leaves.
