This tomato basil panzanella recipe is simple to create and spectacular to serve. Serve it is as a salad alongside a light supper or serve it as a meal in and of itself. The bread makes it hearty and filling.
This recipe was supplied by the original owner of BasilBasics and we decided to give it a try when we were away on vacation. It was such a hit, that it has found its way back home with us. Ingredients:
6 cups stale country style bread, cubed
6 cups chopped tomatoes
4 garlic cloves, minced
1/2 cup fresh basil leaves, coarsely chopped
2 Tablespoons red wine vinegar
1/2 cup extra virgin olive oil
salt and pepper, to taste
Preparation:
Place the bread in a large salad bowl. Add the tomatoes, garlic and basil. Toss to combine. Add the vinegar and olive oil. Season with salt and pepper. Toss well. Let sit at room temperature for at least 15 minutes prior to serving.
